Vibrant Vegan Pancit: A Colorful Take on a Filipino Classic

Filipino pancit noodles, vegetables and a crispy garlic topping make this dish from New York’s Harana Market a memorable one.

Embracing New Culinary Adventures in the Hudson Valley

Moving from the bustling streets of Brooklyn to the serene landscapes of the Hudson Valley brought unexpected joys and a few challenges for my partner, Grace, and me. While we quickly fell in love with the fresh air, scenic views, and peaceful environment, we missed the variety of takeout options available back in the city. Our cravings for diverse, flavorful dishes were eventually satisfied by discovering Harana Market, a gem that introduced us to Filipino cuisine right in our new neighborhood.

Harana Market: More Than Just Food

Harana Market, initially launched in Woodstock and later relocated to Accord, near our home, has become a beloved part of our community. Owned by Eva Tringali and Chris Mauricio, this market and eatery not only serves delicious meals but also acts as a vibrant gathering place for the LGBTQIA+, AAPI, and BIPOC communities. The owners’ commitment to creating a safe, welcoming space is evident through their initiatives like the pay-it-forward gift wall and free meals for LGBTQIA+ individuals on Sundays, making Harana a cornerstone of community support and inclusivity.

A Culinary Lesson in Vegan Pancit

Chris from Harana Market recently shared their special recipe for mushroom pancic—a vegan version of the traditional Filipino noodle dish. This recipe begins with making crispy fried garlic, which not only adds crunch but also infuses the oil used for cooking. Fresh vegetables, shiitake stir-fry sauce instead of oyster sauce, and pancit noodles come together to create a dish bursting with flavor and color. This pancit can easily be customized with different proteins or additional veggies, making it a versatile dish suitable for any gathering.

This narrative not only shares a delicious recipe but also highlights how food can bring people together and create a sense of community and belonging, especially in a new environment.
