Melbourne diners are on the brink of experiencing a touch of Peru that might come as a pleasant surprise to some. Enter chifa, a fusion cuisine that beautifully blends Chinese culinary influences with South American flair, originating from the adaptation Chinese immigrants made to unfamiliar local ingredients over a century ago in Peru. Today, chifa restaurants stand out as beloved dining establishments in Peru, offering a delightful mix of stir-fries, char-grilled meats, rice, and potatoes.
The newest addition to Melbourne’s culinary scene, Casa Chino, is set in Brunswick and promises to introduce a fresh wave of patrons to this unique gastronomic fusion. Co-owned by Jared Thibault and Vincent Lombino, Casa Chino draws inspiration from similar successful ventures in the United States, where the concept of Chino-Latino cuisine is more prevalent. Thibault’s late wife, Fiorella Aguila, a talented Peruvian chef, also played a significant role in shaping Casa Chino’s culinary direction.
Chef Kevin Galdo, hailing from Peru, curates a menu at Casa Chino that showcases traditional chifa delights alongside a delectable array of ceviche and classic Cantonese dishes like siu mai. Among the signature dishes is the renowned Lomo saltado, a tantalizing stir-fry featuring beef infused with Peruvian chili, served with a side of fries and rice. Galdo’s chaufa, a flavorful fried rice dish, incorporates ingredients like capsicum, pork neck, and authentic Kikko Siyau soy sauce imported from Peru.
For the more adventurous diners, Casa Chino offers innovative creations such as crab and prawn toast elevated with rocoto sauce, a spicy Peruvian mayonnaise boasting rocoto chilies. The ambiance at Casa Chino is accentuated by an open kitchen seamlessly connected to a vibrant bar that specializes in creative cocktails. Expect to find a unique twist on classic tiki drinks, incorporating Peru’s signature grape brandy, pisco, in place of rum.
The restaurant’s design aesthetic blends Cuban-inspired tiles, lush greenery, and colorful window shutters reminiscent of Chinatown, creating a visually captivating setting. Textured concrete walls, curved arches, and cozy nooks add an element of intimacy to the space, which can accommodate up to 90 guests.
Managed by the talented Melita Cani from Agostino in Carlton, Casa Chino is a part of the restaurant group Talisman, overseen by Lombino and Thibault, which already boasts six successful venues in Brisbane with more expansions on the horizon in both cities.
Casa Chino’s doors will open from April 10, welcoming guests from Wednesday to Thursday starting at 5 pm till late, and from Friday to Saturday from noon till late. Visit them at Shop 1, 212-214 Albion Street, Brunswick.
