Upgrade Your Brunch with Tasty Vegan French Toast

Impress your brunch guests with a delightful Strawberry-Vanilla French Toast recipe inspired by Kristy Turner’s culinary genius. Each slice, infused with vanilla bean flavor and topped with homemade strawberry sauce, promises a delicious brunch experience.

Ingredients

For the French toast:

  • 1 vanilla bean
  • 1 cup almond milk
  • ½ cup canned coconut milk
  • ½ cup chickpea flour
  • 2 tbsp maple syrup
  • 1½ tbsp arrowroot powder
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • Vegan cooking spray
  • 8 slices of vegan bread
  • Powdered sugar (for dusting)
  • Sliced almonds

For the strawberry sauce:

  • 4 cups chopped strawberries
  • 1 tbsp cornstarch
  • 2 tbsp agave or maple syrup
  • 1 tbsp lemon juice
  • 1 tbsp water

Instructions

  1. Slice and scrape the vanilla bean, then mix with almond milk, coconut milk, chickpea flour, maple syrup, arrowroot powder, vanilla extract, and salt.
  2. Preheat the oven and prepare a cooling rack. Cook bread slices in a frying pan until golden brown, then keep warm in the oven.
  3. Simmer strawberries, cornstarch, syrup, lemon juice, and water for the sauce until thickened.
  4. Layer French toast slices with whipped cream, strawberry sauce, powdered sugar, and sliced almonds before serving.
